Inventor wants to help us on his jobs in shop+sign NDA

Hi, I’ve been in this situation many times; here is what has worked for us: (I’ve been in business for 15 years, 20yrs in industry before that, so I've seen s bit.)

-mutual NDA is a must, typically 2 pages at most!
- scope of work document as part of the quote to help get the NDA completed
-REQUIRE a deposit that once submitted, will initiate a Project document
-Project document once the deposit is in place, lots of negotiation should happen at this phase, and this document MUST have limits to the extent of your resources, and how they can be used.
-some type of limit of liability, (i include this in my Quote document), if they accept the quote, they accept the limits.

the process is intended to protect your time and resources, while also making them value those resources. Beware, if they dont see that as acceptable, then they wont see your resources as having Value, and you will be in for a tough slog.
